Winemaking

Hand-picked at their optimum point, the grapes are destemmed, crushed and vinified according to a process based on careful maceration with extraction of colour, tannins and aromas from the skins, complemented by permanent pumping over during fermentation. This takes place in stainless steel vats, at a controlled temperature between 28-30ºC, until reaching the desired Baumé degree. At this stage, wine brandy is added (benefit), resulting in a fortified wine. Obtained by blending wines of varying degrees of maturation and provenance, conducted through aging in stainless steel and wood for a minimum of 3 years, thus guaranteeing a rich, aromatic final wine with a balanced sweetness.

Tasting Notes

Deep ruby-red colour, with garnet halo. Classic nose, where the liveliness of the young fruits come together in a delicate balance. Firm, vigorous palate, with aromas of fresh fruit and a long, harmonious finish.

Recommendations

Combine with strawberry and yogurt mousse, red fruit clafouti or camembert puff pastry with raspberries and rosemary. Serve at a temperature between 12 and 14ºC.

The wine must be stored in a cool and dry place, sheltered from light and temperature fluctuations and the bottle must remain in an upright position. As a natural product, Port Wine is subject to deposits with age. Once the bottle is opened, it is recommended to consume it within 2 to 4 months.
