Description
Wines of exception in time of war
It’s 1940, in the Douro wine region, in the historic Quinta de São Luiz. The year had been difficult, but the quality of the fruit predicted a long future for the wines from this harvest. Over the years and generations, there were many opportunities and pressures to commercialize this nectar. The world was changing and societies evolving. However, this wine was safeguarded for 80 long years, in a cellar that has passed through time. Being patient is a virtue of the strong. This waiting, combined with the terroir, the vision and the mastery of aging wines in cask, turned this wine into a unique experience.

Winemaking and Aging
Hand-picked at their optimum point, the grapes are destemmed, crushed and vinified according to a process based on careful skin maceration and pumping over during fermentation to produce whites full of color and structure, with enough phenolic compounds to withstand aging in wood. prolonged. This fermentation takes place in lagares until reaching the desired Baumé degree. At this stage, wine brandy is added (benefit), resulting in a fortified wine. High quality wine from a single harvest. It aged in wood for 80 years.
Concept
The Day and Night cycle on Earth refers to the rising and setting of the Sun and Moon. This special edition intends to celebrate how this cycle, repeated for eight decades, 29,097 days and nights, had an extraordinary influence on the quality of these two wines that were preserved in cascaria. Metaphorically, the symbol of the half moon around the central axis of the Kopke seal was highlighted in the form of an allegory to the careful aging that took place to ensure that these wines represent the style of Porto wines from Casa Kopke, which are characterized by their crisp acidity and refreshing. Colheita 1940 Tawny takes on a black and white chromatic palette representing the elegance of the Moon. Colheita 1940 White takes on a chromatic palette of white and bronze representing the surprising sunrise and sunset.
Harmonization
White: Refreshed, it stands out when combined with hard cheeses such as Ilha cheese. It also pairs perfectly with honey-roasted almonds, caramelized seafood and curry.
Tawny: Kopke recommends that it be served slightly chilled and suggests pairing with tournedó, caramelized onion with peanut shavings, caramelized pear accompanied by Serra cheese ice cream, dehydrated apricots and desserts based on caramel, dried fruits and spices.
